The Pro 400 is a heat-exchanger machine and a sister to the Jump: a single stainless-steel boiler makes the steam and heats the brew water as it passes through, so milk can be steamed while the coffee runs. The group is Profitec's own design, worked with a lever. A switch under the machine picks one of three brew temperatures and turns pre-infusion and the energy-saving mode on or off.
Unlike the Jump it has no display, and it uses rotary valves for steam and hot water instead of levers; the box includes three pairs of coloured discs for the knobs, to change the look of the machine. Two gauges show boiler and pump pressure, and the pump pressure can be adjusted with a screwdriver. The portafilter has silicone spouts that come off and clean in a moment.
It needs switching on about twenty-five minutes before the first coffee, and wants a counter almost 45 cm deep. Scale is best prevented: once a machine has calcified, only the dealer can descale it, since the boiler and pipes may need partly taking apart. It is for someone who wants Profitec's heat exchanger in its more mechanical form, knobs and gauges with no screen; anyone who wants the shot timer on the machine should look at the Jump.
