The Cellini Evo PID is a heat-exchanger machine with the café E61 group and a copper boiler: a single boiler makes the steam and heats the brew water, so milk and coffee can be made together. The portafilter is the café-standard 58 mm, the pump is rotary, and water comes from the tank or, if you prefer, from a mains connection. Steam and hot water open with two levers, and the wands stay cool.
A PID holds the boiler temperature, which can be raised or lowered by a few degrees to suit the coffee. During pauses the machine drops into energy saving by itself, lowering the boiler, or into a deeper standby that you wake by lifting the group lever. The box holds the portafilters, single and double baskets, a blind basket, a tamper, a scoop and a water-softener filter.
The group is cleaned with the blind basket and detergent, running the machine empty a few times. It is for someone who wants a café group at home and the maintenance that comes with it; the 1.7-litre tank is small for anyone making many coffees, and then plumbing it in pays off. Like every E61 group, it needs switching on in good time.
